OMG… My sweet rosemary chicken thighs will have you licking your fingers clean! These thighs are juicy, tender, and brimming with flavor. I call it the perfect pan roasted chicken, because they are crispy and slightly saucy at the same time. I made sure to use simple and healthy ingredients to create the sauce, so that you are not eating a load of crap while cooking at home. This is a recipe that the whole family will enjoy, as my one year old positively loved these chicken thighs, and everyone else in the house thought it was the bomb! So damn delicious!

This recipe turns out best when using the cast iron skillet… and if you don’t know, I am obsessed with using my cast iron skillet. I will literally cook everything and anything in there! Food just seems to be a little more tasty when cooked in the cast iron skillet, especially chicken thighs with the skin left on. Mmmmm!

I just love how ridiculously easy this is to prepare! I usually whip up this recipe when I have nothing planned for dinner, and I want something done quickly. You have to put a little work in when chopping the rosemary, and zesting the lemon, but that part is a breeze! I have a garlic press, so that takes the work out of the garlic for me, and everything else I just throw together.Β This is definitely one of my favorite recipes that I created, and I’m really happy to share it with everyone. πŸ™‚ It is a family favorite in my house, as it comes out exceptional every time!

Sweet Rosemary Chicken Thighs

Total Time: 45 minutes

Yield: serves 2-4

Ingredients

  • 6 chicken thighs, skin on
  • 1 tablespoon canola oil
  • kosher salt and pepper to taste
  • FOR THE SAUCE:
  • 1/4 cup extra virgin olive oil
  • 1/4 cup 100% pure organic maple syrup
  • 1 tsp. yellow mustard
  • 1 tsp. lemon zest
  • 1 tsp. freshly squeezed lemon juice
  • 1 tablespoon freshly minced rosemary
  • 2 cloves garlic, pressed
  • 1/4 tsp. kosher salt

Instructions

  1. Preheat the oven to 450 degrees. Rinse chicken and generously season with salt and pepper to taste. Set aside.
  2. In a medium size bowl prepare the sauce, add olive oil, maple syrup, mustard, lemon zest, lemon juice, rosemary, garlic, and salt. Stir together and set aside.
  3. Heat canola oil in a cast iron skillet over high heat until hot (but not smoking). Add chicken skin side down and cook chicken for about 2 minutes. Reduce heat to medium, and continue cooking skin side down occasionally rearranging the chicken around in the pan. About 7 minutes. Flip chicken skin side up, and cook for about 5 minutes. Turn chicken skin side down again, take a spoon and drizzle some of the sauce over each chicken. (Don't finish the sauce) Set remaining sauce aside. Garnish the skillet with lemon slices and rosemary.
  4. Transfer cast iron skillet to the oven, and cook chicken for about 14 minutes. Flip chicken so skin side faces up, take a spoon and drizzle some of the sauce over each chicken. (Don't finish the sauce) Set remaining sauce aside. Place back into oven and continue cooking for 5 more minutes.
  5. When cooked through, take chicken out the oven and let it cool for about 5 minutes. Drizzle each chicken with remaining sauce and serve while still hot.
