I had to jump back on board with this whole clean eating movement, before the #eatclean people come after me. I also needed this healthy cauliflower rice recipe, especially after I just stuffed my face with that No Bake Apple Pie. I couldn’t just leave ya’ll hanging like that!

I kid you not, when I say this taste better than rice… and don’t you even for a second think this taste bland or boring. This dish is surprisingly REALLY flavorful. You wanna know whats funny? I don’t even like cauliflower. There, I said it. I usually walk right past the cauliflower when I am shopping at the grocery store. Who else does this? I know I am not the only one!

This paleo dish is not only an excellent substitute for rice, but it is vegan and gluten free! Also a great way to get those veggies in! My picky eater toddler loved this recipe, so I give it a thumbs up to families cooking with children.

Cauliflower Rice Recipe

Total Time: 10 minutes

Yield: serves 2


  • 1 large head cauliflower, chopped into florets
  • 1 tablespoon coconut oil
  • 1 cup scallions (green onions), thinly sliced
  • 1 tsp. garlic powder
  • pink himalayan rock salt, to taste
  • 1/2 tablespoon of lime juice, freshly squeezed
  • OPTIONAL: fresh parsley, finely chopped


  1. Cut away as much stem as possible from the chopped cauliflower florets. In small batches, blend florets in a food processor until cauliflower resembles rice.
  2. In a wok or large deep pan, heat coconut oil over medium heat and add in scallions. Cook scallions for about 1- 2 minutes.
  3. Add cauliflower rice, and garlic powder. Mix well. Cook for about 3 to 5 minutes stirring often.
  4. Off the heat, and add pink himalayan rock salt to taste. Then add fresh lime juice, and stir to coat.
  5. Garnish with fresh parsley if desired. Serve while hot.
