Oh. my. goodness. GAWSH. This dish turned out beautifully! Looks pretty fancy for a 30 minute meal huh? I literally timed myself while cooking this recipe, (like the crazy cooking lady that I am) to make sure that I could post another quick & easy recipe.  After some trial and error while developing this dish, I finally got it to perfection. I originally started out with eggplant as a side vegetable, but lets just say that I hate eggplant now, and Mr. eggplant is currently rotting away in my fridge…only because I refuse to throw away food.

I hope you don’t mind all the photos, but I decided to take some extra time on my photography, to try to show you step-by-step on how to make the recipe. Which will first include you making my 5 minute easy pesto sauce.

After you have blended together my 5 minute easy pesto sauce, set aside for later use.

Preheat your oven to 450 degrees. Line a large baking pan with foil paper, then wash and peel the carrots. Don’t forget to remove the carrot tops.

Wash the zucchini, remove the ends, and cut in half lengthwise. Slice the flesh in a crisscross pattern like shown above.

Place carrots and zucchini onto the lined baking tray. Brush olive oil onto the carrots and zucchini. You want to make sure the whole carrot and zucchini is covered in olive oil. Using the brush will help keep the oil out of the pan, and is the best way to get an even coat. After applying the olive oil, season both sides with salt and pepper to taste. I used a good amount of Himalayan pink salt, and freshly ground black pepper. Any kinda salt will work just fine though.

Place carrots and zucchini into the oven for 15 minutes to give them a head start. Make sure to leave room for the corn and salmon as well, which will be placed onto the same tray. The carrots and zucchini take about 30 minutes to cook, so you will want to add the salmon and corn later.

While the carrots and zucchini are in the oven, you need to shuck the corn. Wash, clean, and shave the corn off the cob. The best way to shave the corn off the cob is to stand the corn upwards, and then run a knife down the side.

Place the raw corn kernels into a bowl and add a tiny bit of olive oil. Season with salt and pepper to taste and toss to evenly coat.

Season the salmon with salt and pepper to taste, and then brush on my 5 minute easy pesto sauce.  As you can see, I like to smother my pesto sauce on, but you can put a desired amount onto your salmon.

After the carrots and zucchini have been in the oven for 15 minutes, take the baking pan out and add the salmon and corn. Rearrange the vegetables to make space if needed. Try not to have the corn completely on top of each other. Place everything into the oven for 15 more minutes. This will allow the salmon and corn to cook, and the carrots and zucchini to finish.

After about 15 minutes, take everything out the oven and serve with fresh pesto sauce. I like to dip my vegetables into the pesto sauce, or drizzle it right on top of my veggies. A little more fresh pesto sauce on the pesto salmon is delicious as well. Enjoy!

Ingredients

  • 2 fresh pieces of salmon
  • 4 whole carrots, medium sized
  • 1 zucchini, medium to large sized
  • 1 corn on the cob
  • extra virgin olive oil
  • salt and pepper to taste
  • You will also need my 5 minute easy pesto sauce

Instructions

  1. Blend together my easy pesto sauce recipe.

  6. After the carrots and zucchini have been in the oven for 15 minutes, take the baking pan out and add the salmon and corn. Rearrange the vegetables to make space if needed. Place everything back into the oven to cook for 15 minutes.
  7. Serve with fresh pesto sauce as a dip for the vegetables, or drizzle pesto right on top of the vegetables and salmon.
