I honestly can’t choose what I like better about this recipe. The oh so creamy Roasted Garlic Dip, or the savory Lemon Peppery Potato wedges. Both are equally delicious, and when combined they create an explosive heavenly flavor…..Mmmmm… and when I say peppery, I mean they have little kick to them. A mild kick to be exact. The roasted garlic dip balances out the flavor though, so it doesn’t end up being spicy at all.

Okay, so I know I’ve uploaded more photos than normal, but I wanted to show you guys exactly how I cut this garlic. The photo above was taken after I took the garlic heads out the oven, but I hope this gives you an idea of how to cut the top off. Make sure to use a sharp knife! Little ol’ me had a hard time slicing that top off!

Dip makes about 2/3 cup

Lemon Peppery Potato Wedges With Roasted Garlic Dip
Print
For the Roasted Garlic Dip
  1. 2 heads of garlic (2 bulbs)
  2. 2 tablespoons of olive oil
  3. 1/2 tsp. thyme
  4. 1/3 cup sour cream
  5. 1/4 cup mayonnaise
  6. 1 tsp. rice vinegar
  7. 2 tablespoons parmesan cheese, grated
  8. 1/2 tablespoon lemon juice, freshly squeezed
  9. 1/2 tsp. salt
  10. 1/2 tsp. freshly ground black pepper
For the Lemon Peppery Potato Wedges
  1. 2 large russet potatoes (or 3 medium)
  2. 2 tablespoons olive oil
  3. 1 tablespoon lemon juice, freshly squeezed
  4. 1/2 tsp. paprika
  5. 1/2 tsp. cayenne pepper
  6. 1 tsp. garlic powder
  7. 1 tsp. dried rosemary
  8. 1 tsp. dried oregano
  9. 1 tsp. dried thyme
  10. 1 tsp. dried parsley
  11. 1 tsp. salt
  12. 1 tsp. freshly ground black pepper
To make the dip
  1. Preheat oven to 400 degrees. Cut off about 1/2 inch of the top of garlic heads, exposing just the top of the cloves. (scroll up to see photo). Lightly brush garlic heads in olive oil, then wrap in foil paper. Bake in the oven for 1 hour. (In the meantime, start the potato wedges!)
  2. When finished and cool enough to handle, squeeze garlic cloves out of their skins and into a blender or food processor.
  3. Add all remaining ingredients for the Roasted Garlic Dip recipe to the blender. Mix until smooth and creamy. Serve immediately, or store in refrigerator for later.
To make the potato wedges
  1. Preheat oven to 400 degrees. Wash and slice potatoes lengthwise, then slice lengthwise again until you get your desired size.
  2. Place potatoes in a large mixing bowl, and add all ingredients for the Lemon Peppery Potato Wedges. Thoroughly mix until all ingredients look well incorporated.
  3. Lay potato wedges on their back in a large baking pan lined with foil. Bake in the oven for 30 to 40 minutes. Serve immediately.
Notes
  1. I like my potato wedges golden brown with a little crisp, so I always bake for the full 40 minutes.
