Bacon wrapped carrots? …Maple syrup? The combination had everyone squinting their face at me when I told them what I was cooking. Followed by comments like “why would you wrap bacon around a carrot?” Uhhhhh…..because its bacon. Duh! 

My sister took one bite and was like “its good.” I watch her take another bite, and she says “okay, I like it”….”yea this is really good.” As she proceeded to gobble down what was left in the pan. I couldn’t help to think blurt out “I told you so!”

So yeah, I recognize that bacon and carrots usually don’t mix, but after finding this recipe on Keyingredient, I knew I had to make it. The heavenly taste of crispy savory bacon, paired with tender sweet carrots, then drizzled in maple syrup, is OMG deliciousness. Yes, I have to add the ness to the end of delicious, so you know its EXTRA delicious. 

I did change a few things to the recipe. I cooked it at a higher temperature for a little longer, and used a cast iron skillet. Doing this I was able to get my bacon a little crispier. I also added a little salt, pepper, and dried rosemary. I found the dried rosemary gives it a really nice flavor, but I made this step optional.

Maple Glazed Bacon Wrapped Roasted Carrots

Ingredients
  1. Carrots
  2. Bacon
  3. Maple syrup, 100% pure
  4. Salt and pepper, to taste
  5. Optional: Dried Rosemary
Instructions
  1. Preheat oven to 425 degrees. Wash and scrub carrots then dry in paper towel.
  2. Wrap each carrot with one piece of bacon, then brush with maple syrup.
  3. Place carrots in a large cast iron skillet (for crispier bacon), or a large baking pan. Bake in the oven for 20 minutes, then turn carrots over and brush a second time with maple syrup. Put carrots back in the oven to continue cooking for about 20 minutes more.
  4. Take carrots out the oven and season with salt and pepper to taste. Sprinkle with dried rosemary if using.
Notes
  1. I used a cast iron skillet because I prefer crispier bacon. If you don't like your bacon crispy, a regular baking pan will do just fine.
