Good morning to all with these delicious homemade pancakes! Mmmm….Fluffy, rich, tasty pancakes. Aunt Jemima got thrown into garbage bag after I made these, I needed to make room for my freshly made pancake mix. I will never buy store-bought pancake mix again! This recipe is too easy! Not only is it easy, but it taste wayyyyy better. Like, wayyyyy better.

I honestly don’t understand why anyone would buy pancake mix after making this… It. just. doesn’t. make. sense. It’s the purrrfect recipe for:

  • Anyone who’s trying to live a slightly healthier lifestyle
  • Anyone who dislikes the long list of ingredients on boxed food
  • Anyone who LOVES pancakes (who doesn’t like pancakes?)
  • Anyone who enjoys homemade meals, & thinks this is awesome
  • Anyone who is looking for quick & easy meals cause cooking sucks

Okay, cooking doesn’t really suck, but you know what I mean. I’m sure we all wish we can have a personal robot cook our meals all day. Until then, this easy peasy 5 minute pancake mix will do the trick. 🙂

Homemade Instant Pancake Mix

This 5 minute recipe for a homemade instant pancake mix is a must try! Say buh-bye to Aunt Jemima, and hello to fluffy delicious homemade pancakes.


  •  Mix will last about 3 months.
  • 1 cup of the pancake mix will make approximately 4-5 pancakes.
  • Total time: 5 mins

Instant Pancake Mix
  1. 5 cups of all purpose flour
  2. 2 tsp. baking soda (fresh)
  3. 1 1/2 tablespoons baking powder
  4. 1/2 tablespoon salt
  5. 3 1/2 tablespoon of granulated sugar
To make the pancakes
  1. 1 cup of the instant pancake mix (above)
  2. 1 egg
  3. 3/4 cup milk
  4. 1 tsp. vanilla extract
  5. 1 1/2 tablespoons butter, melted
Instructions
  1. To make the instant pancake mix, add all of the dry ingredients for the pancake mix to a large ziploc bag. Tightly close the bag, and give it a good shake. Shake the bag for at least 1 minute.
  2. Using a large spoon, carefully scoop pancake mix out of the ziploc bag, and into a preserving jar.
To make pancakes
  1. Add 1 cup of the instant pancake mix above to a medium sized bowl.
  2. Melt butter and set aside.
  3. In a separate bowl, beat egg, milk, and vanilla extract together.
  4. Add the melted butter and egg mixture to the dry pancake mix, and beat with a fork until all ingredients are well incorporated.
  5. Heat a lightly oiled frying pan over medium high heat. Pour slightly less than 1/4 cup of batter into the pan to make each pancake. Flip pancake over when it starts to bubble, or the bottom is golden brown. Continue to cook until both sides are golden brown.
Notes
  1. Top with maple syrup and your choice of fruit, chocolate, or whipped cream.
  2. 1 cup of the pancake mix will make approximately 4-5 pancakes.

  4. I need this mix in my house at ALL times because my husband says weekly how much he loves pancakes – IE: I wish you would surprise me in the morning with pancakes in bed. LOL!

      LOL! The homemade pancake mix really comes in handy, and taste way better than the store-bought version in my opinion.
